Pesto

Prepare your homemade basil pesto sauce following the perfect recipe by the Cookery Club Mathimata Mageirikis and your dish will smell summer! Besides pasta, try it on potatoes, chicken, fish, even spread it on sandwiches!

Toast the pine nuts at 180°C until they are golden and leave them to cool. Place in a blender the basil, the water, the lemon juice and zest and process until smooth. Add the garlic, the pine nuts and the parmesan cheese and continue the smoothing process. Pour slowly the olive oil and blend. Season with salt and pepper and stir.

  • 20g fresh basil leaves Aroma
  • 2 garlic cloves
  • 15g pine nuts
  • 20g freshly grated parmesan cheese
  • 50-70ml olive oil
  • zest of half a lemon
  • 5g lemon juice
  • 8g cold water
  • salt
  • pepper
